MR. HENRY'S LATEST TRICK, DAVE'S HAIR AND TODAY'S OUTFIT.

makes me nervous, but it's okay because i get to look at his cute bum.

and dave finally shaved off his beard...but not before i took lots of pictures!

also, it's really awkward to take pictures of yourself and post them on the internet. so i probably won't do it anymore. just trust me that i'm doing really well on my march goals, mkay?

THE HOUSE OF A THOUSAND STAIRS, DOG HAIR AND I ALREADY MISS SARAH LIKE CRAZY.

we just had so much fun.

sarah is the type of friend that it doesn't matter how much time has passed - we just pick up where we left off. she makes me laugh harder than anyone IN THE WHOLE WORLD, and it's really this creep, silent laugh where my nostrils flare and tears come to my eyes. sort of embarrassing when it happens in front of her super-hot boyfriend jared...

...who we stayed with in boston. in the house of approximately ONE MILLION STAIRS. and see, i tried to keep our crap to a minimum by hiding away all baby things in our bedroom at the top of the stairs. the very, very top of the stairs. forgetting something was almost devastating at times. like - holy crap, i can't take these stairs again. and guess who forgot a baby monitor? yeah. i managed to lose a pound though, so there you go.

we spent monday getting lost bumming around in boston.we went to the museum of fine art, because we are soooo cultured like that. our favorite part was the display about fashion sketches. not the monet, degas or the ancient egyptian art. nope - the fashion sketches was where it's at.







henry was a gem the entire 2.5 hours we were at the museum. i kept him in his moby facing outwards and he just checked out the art. when he got sleepy i faced him toward me and he crashed on my chest. he is a good museum baby.

i wanted to see the old north church so we...did. and walked around quite a bit - grabbed some cheesecake - you know, nbd. except the cheesecake was probably 5 pounds PER PIECE and we pounded it later that night. and in the car on the way home.





oh and also on the way home we drove through salem to find some witches, except it's really just a cute little town with some weird museums in it.


we flew home tuesday and boy were our arms tired. like, literally. my arms were noodles. henry likes to jump and that was the best way to keep him entertained on the very last flight. bouncing. the. whole. time.



it was great to be home. i missed hallie something awful. i'm just not right when i'm not with my girl.

*post-edit: the dog hair. jared has two HUGE labs, lily and logan. the sweetest, oldest doggies on the east coast. they are precious. and also they have lots o' hair that ended up mr. henry and his toys and his bottles, etc as he crawled around the floor. like, he was covered. that's all.

SILENT LAUGHING, CHEESECAKE AND I LOVE SARAH SO MUCH.

so.

spring break is over. sad face.

i had an entire glorious week off of work and it was glorious. off of work.

i started by loading up my youngest and heading to boston to see my bff sarah. and it was awesome. and i would do it again over and over (see sarah - let's do it again!).

henry was a fantastic flyer. easy to entertain, great at the airports, great, great, GREAT. he is such a good baby.

we spent our time bumming around marble head, eating delicious and healthy food (except for that one cheesecake incident, but really let's not talk about it). we also checked out museums, looked for witches and got lost in boston. which was not surprising. at all.

HOW I WORK OUT.

ali-b had asked me about how i am working out, what i'm doing.

now, keep in mind this has only been going on for a month. i'm scared to death of the day i start getting bored. so i'm trying to mix it up a little bit.

it all started because of my mother-in-law, barb. she had a 12 minute...yes, TWELVE minute, dvd that she gave me to try. and i started that very night. i figured - who doesn't have TWELVE minutes to workout? i mean, seriously. TWELVE minutes.

so i did it, and it was a cinch. so the next night i did that dvd again, plus an 11 minute ab DVD that i had from back in the day (slim in six, beach body).

so then the next night i decided to do the accelerated workout on the dvd - just 20 minutes, plus the ab dvd.

and then the next night i started doing the 30 day shred with jillian michaels, level one. and i loved it. much harder than the other dvd, but still just 20 minutes.

and the next night i did that again, plus the abs. i did that for a few weeks. then i went up a level - yowzers. so sometimes i do that plus the abs, sometimes i skip the abs.

but then i hurt my stupid foot. i workout barefoot and got me some "turf toe." look it up - only us SERIOUS athletes get it. HAHAHAHAHAHAHAHAHAHAHAHAHAHA. sorry. whew.

so my stupid foot hurts like the dickens, except i don't want to stop working out because i'm afraid of getting out of the habit! so, i started doing the slim and six, start it up dvd, which is only 25 minutes. it's very low impact, but i still have to skip the lunges or anything that bends my big toe in anyway. because that hurts.

i love debbie from slim and six, but i miss the hard workout from jillian. it stinks that i've worked so hard to make this a habit and now i'm having to slow it back down.

blah.

anyway, that's it! not very exciting - but has been effective for me. and if anyone has any suggestions about a workout let me know...something that won't kill my poor tootsie.

also: i just ate a whole back of the grandma's mini sandwich cremes. yay willpower!

FROYO WITH THE FAMILY.

at hallie's school, they give a sticker for a good day at school. on a calendar. and we have to initial that we acknowledge our kid's awesomeness and send it back everyday. i'm sure there are some kids that don't get stickers, but not hallie. she rocks at school.

so for every month of stickers she gets to pick a place to go out to eat. last time was applebee's, this time was mcdonald's. we aim high around here.

she also wanted to get some frozen yogurt at the frozen penguin. i had never been before, so you betcha we were going!

february was fun. probably because i did everything i wanted to do.

DONE, DONE & DONE.

and that is how you rock some february goals, people.

except the bonus goal, because that one was going to take way too much work.

recap - here are the goals:
1. work out at least three times a week.
 
*more like working out EVERY SINGLE DAY! go me, go me! i have finally found the trick to working out daily, which is to do it as soon as the kiddos go to bed. period. it's ME time and i'm loving it! and i've lost weight! and feel great! and have muscles! and energy! obviously!

2. try at least one new recipe a week (ha - this just feeds my pinterest addiction).
 
*well, we all know i've rocked this one big time. i really do enjoy cooking and love trying new recipes. not all have been steller, but it's been fun to try these new things.

3. paint the stupid mirror in the the basement. i have the spray paint. just...do it.

RECIPES AND LEAVING ON A JET PLANE.

none of my bags are packed, but henny and i are jet-setting for the east coast in a few days. i broke the news to hallie yesterday and and she bawled. hey - not my fault she grew up and now has to go to school!!

i wish i could take her. so bad. i never feel complete without that little girl.

anyway, we are off to visit dear-friend sarah. i haven't seen her in a million years so i figure we're due. so now i get to figure out how to deal with bottles/formula on an airplane - suck - and how much crap to pack overall. i've gotten some great advice, so i think i have a grip. i'm just worried about warming up the bottle on the airplane. that's it. nothing else. just the bottle being warm on the airplane.

such 1st world problems right there.

let's see...i've been smokin' my goals for february (see the original post here) and will do an official report tomorrow. i know you (mom, barb) can't wait.

here's a few recipes i pinned and actually made from pinterest!


Philly Cheese Steak Sloppy Joes

1 tablespoon olive oil
1 pound ground beef
1 softball-sized onion, chopped
1 green pepper, chopped
2 tablespoons steak sauce
1 cup beef stock
Salt and ground black pepper
4 dinner rolls
1 tablespoon butter
1 tablespoon flour
1 cup milk
1 cup provolone, shredded

In large skillet over medium-high heat add the oil and then brown the ground beef, about 5-6 minutes. Add the onion and green pepper and cook another 3-4 minutes, until the vegetables start to get tender. Stir in the steak sauce and beef stock, season with salt and pepper, bring up to a bubble and cook about 2 minutes.

Split open rolls and remove most of the soft insides, leaving a bed to hold the meat mixture. Toast the rolls and set aside.

While the meat is cooking, melt the butter in a medium-size pot over medium-high heat. Stir in the flour and cook about 1 minute. Whisk in milk, bring up to a bubble and let thicken, about 2 minutes. Turn off heat and stir in the cheese.

To serve, place a scoopful of the meat mixture onto the bottom of the rolls, then top with the cheese sauce and replace the top of the roll.

Keri's Notes:
these were...good. nothing spectacular, but good. i didn't do the cheese sauce and that might have taken it up a level. I just melted provolone over a bun. I actually didn't even eat that - just ate the mean mixture over lettuce. I liked it, it just wasn't that exciting for me!

Skinny Pumpkin Muffins/Cupcakes

i will make these again and again. you just can't beat how easy and low-fat they are. they are suuuuper moist. i made full-size muffins and drizzled some frosting i had leftover in the fridge (just melted it in the microwave and drizzled away). i also made some mini muffins and dipped the tops in melted butter and rolled in a cinnamon/sugar mix. they were perfect for brunch the next day.

Ingredients:
  • 18.25 oz cake mix - super moist (I used Aldi's brand yellow cake mix)
  • 2 tsp pumpkin pie spice
  • 1 cup canned 100% pure pumpkin
  • 1 cup water
Directions:

Preheat oven to 350°. Line a cupcake tin with cupcake wrappers.

Combine cake mix and pumpkin spice in a large bowl. Add pumpkin puree and water, mix about 2 minutes.

Cashew Chicken - holy crap these were so good.

Ingredients
    For stir fry sauce:
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar  (i just used cider vinegar)
  • 1 tablespoon brown sugar
  • 1/4 teaspoon ground red pepper
  • 1/4 teaspoon ground ginger
  • 1 teaspoon sesame oil
  •  
  • For Cashew Chicken:
  • 2 chicken breasts (about 3/4 lb. total), diced
  • 8 leaves of greenleaf or iceburg lettuce
  • 3 tablespoons canola oil (or oil of choice)
  • 1 cup onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon soy sauce
  • 1/4 cup cashews, chopped
  • Salt and pepper to taste
Instructions
    For stir fry sauce:
  1. Mix all ingredients making sure to dissolve brown sugar. Set aside.
  2. For Cashew Chicken:
  3. Heat canola oil in pan over medium to medium high heat. Add diced chicken and brown (about 4-5 minutes). Remove chicken from oil. Add onions, garlic and 1 teaspoon soy sauce to pan; brown. When onions and garlic are brown and tender, add stir fry sauce, browned chicken, and cashews. Saute mixture for a few minutes and remove from heat.
  4. Spoon chicken mixture into individual lettuce leaves. Add your favorite hot sauce, more cashews or basil.
Keri's Notes:
seriously, so good. a little bit of heat, but the flavors are delicious. i ate mine over lettuce instead of doing the lettuce wraps and it was delicious, even cold for lunch the next day.

Crispix Mix
  • 7 cups Crispix, or whatever cereal
  • 1 cup nuts (I used peanuts)
  • 1 cup pretzels
  • 3 tablespoons margarine or butter, melted
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon onion salt
  • 2 teaspoons lemon juice
  • 4 teaspoons Worcestershire sauce
Arrange the Crispix cereal, nuts and pretzels on the baking pan/tray. Mix together to evenly distribute the contents.

Pour the melted butter into a bowl. Stir in the garlic salt, onion salt, lemon juice and Worcestershire sauce until thoroughly combined.

Pour the melted butter mixture of the cereal mix on the pan. Coat the cereal, nuts and pretzels evenly, using a pastry brush to help if needed.

Place in the oven and bake at 250ºF for approximately 45 minutes. Keep checking the mixture and stir it every 15 minutes to prevent sticking.

During the cooking, spread out paper towels on the kitchen bench to allow the mix to cool off.

Remove from the oven and spread out on the paper towels to cool.

this was good - very basic. i had crispix in my pantry that needed to be used up or thrown out, so i made this recipe. it was fine - nice and salty. i didn't have any prezels so i just used peanuts and it was great.

RAWR. AND GULP.

i finally tried my first Green Monster, except in this here hiz-ouse we call it the Super Hero Smoothie.

because hallie thinks she has "powers" and to get her to drink this i called it a super hero smoothie and well, that is pretty smart of me. i know.

because it's green.

bright, magically green.

oh and delicious. it tastes like a banana-y, peanut butter-y milkshake. you don't taste even one bit of the spinach. not a single, tiny BIT of spinach, i swear.

i deviated from the original recipe, because i didn't have yogurt and it was still awesome.

Super Hero Smoothie

1 cup skim milk
1 TBSP peanut butter (i used skippy natural creamy)
2 cups spinach
1 small, sliced up frozen banana

BLEND and watch the magic.


you can add whatever fruit you want to. or yogurt. or skip the milk and just do water/ice. or leave our the pb. i think the banana is key. i've heard great things about pineapple too.

HAPPY BIRTHDAY TO ME IN A FEW WEEKS.

i am a simple girl. i don't ask for much (hahaha), but here's what i want for my birthday.

a basic trench: i've been searching for a cute, inexpensive trench for a while. i want basic, light khaki...okay, i really want a super cute green one from old navy, but i know that i would get more wear out of a normal khaki-colored trench.
